With flu having completely taken over my household, the only good thing to come out of it has been a very nice, chicken noodle soup. It makes you feel good for a while, is nice and hot, and very nourishing.
Here's what you'll need:
- 2 Cans creamed corn.
- 2 Cans regular corn (drained)
- 1.5l chicken stock
- 2 tablespoons soy sauce
- 2 tablespoons ginger ( freshly grated if possible)
- 3 onions peeled and roughly chopped
- 4 chicken breasts chopped into cubes
- Noodles - as much as you like
All of this goes into a large casserole or saucepan. At once, let it boil for about 5 minutes, then simmer for another 5, check that the chicken is done, simmer for as long as you like, you can enjoy immediately, freeze it, have it whenever. I promise you will feel better and less flu -y for the few minutes your drinking, eating this soup.
